Berry-Apricot Parfaits

1 cup fresh raspberries, blueberries, or blackberries
1/4 cup apricot preserves
1 pint Purely Decadent Dairy Free Purely Vanilla ice cream

Combine berries and preserves in a small pot and cook over medium heat, stirring occasionally for about five minutes, until berries are softened. Remove from heat, cover, and refrigerate until ready to use.

To serve, layer each of 4 parfait glasses with ice cream and sauce. Garnish with fresh berries and a dollop of Hip Whip or Soyatoo dessert topping, if desired.
